Tahoe Boemboe Bali
Fried tofu simmered in a Balinese spice paste with coconut and sweet soy sauce

- 1 block tofu (tahoe)
- 4 tablespoons oil
- ⅙ block creamed coconut (santen)
For the spice paste (boemboe)
- 2 small white onions, chopped
- 2 cloves of garlic, chopped
- 2 teaspoons sambal oelek
- 5 candlenuts (kemiri), roasted
- 1 teaspoon ground turmeric (koenjit)
- 1 teaspoon ground ginger
- 2 teaspoons palm sugar (gula djawa)
- Salt, to taste
- 1 tablespoon sweet soy sauce (ketjap manis)
- 200ml water
Instructions
Step 1: Prepare the tofu
Cut the tofu into small 2cm cubes and pat dry with paper towels to prevent splattering.
Step 2: Fry the tofu
Heat the oil in a pan and fry the tofu until golden. Drain on paper towels.
Step 3: Make the spice paste
Grind the onions, garlic, sambal, candlenuts, turmeric, ginger, and palm sugar with salt into a paste, using a food processor or mortar.
Step 4: Fry the paste
Fry the spice paste in the remaining oil.
Step 5: Make the sauce
Add the water, creamed coconut, and sweet soy sauce.
Step 6: Simmer
Add the drained tofu and simmer until the sauce thickens.
Tips
Serve with white rice or lontong (sticky rice). Selamat makan!
